Yogurt Chocolate Chip Cookie (our birthday cake of choice)

 

This is the best chocolate chip cookie ever and the best part is that you can eat all the dough you want without worrying about the eggs!  Oh, and I guess the really great part is that Sammie can eat it if I get the right brand chocolate chips that are not made in a peanut factory.  Right.  That’s why I went searching for the recipe.  The eating the cookie dough part is just a way huge side benefit.

Ingredients:

  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1/4 cup margarine or butter
  • 1/4 cup shortening
  • 1/2 cup plain nonfat yogurt (has to be non flavored to taste right)
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

Directions:

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  2. In a medium bowl, cream together the brown sugar, white sugar, margarine and shortening until light and fluffy. Stir in yogurt and vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until incorporated, then mix in chocolate chips. Drop by rounded teaspoonful's 2 inches apart onto the prepared cookie sheets.  (we like to spread it out onto a pizza stone to make the cookie cake pictured for our recent birthday’s)
  3. Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown. Cool for a minute on the cookie sheets before removing to wire racks to cool completely.  (You bake it a bit longer as a big cookie, but not as long as you’d think.  I didn’t time it I just took it out when it looked done.)

The Arch

 

This week is our spring break and we took a little trip yesterday to the arch.  Tyler had never been there.  I wasn’t brave enough to take all 3 kids up in it without Thomas, but we still had fun.  Tyler’s favorite part was touching it and looking up at it when you are standing right under and feeling dizzy.  Ah, that kid. 


Nicole was off work so she came with us.  That made it extra special for the kids. 

 

We played around the arch, looked at a few of the animals in the museum underneath it (until Spencer got a little freaked out by it all) and then we walked along the river front and watched the boats for a while.  We had a nice little picnic and the kids tried to feed rice cakes to the birds.  That part didn’t go so well. 


It was a fun outing and only cost the money for parking.  Smile

Every Tuesday and Thursday Tyler plays with Ms. Robyn, his speech therapist.  He absolutely LOVES Ms. Robyn and will miss her when he goes to Kindergarten next year.

The Big One Two!

 

Spencer turned 12 last week and we had a little party.  We also went to the city museum, but I managed not to get a single picture of that trip.  All well.  We were there and I have the sore knees to prove it!

He liked the cookie cake so much from my b-day I made another one for him.  This time without the fruit since he picked off all of his from my cake.

Spencer doesn’t like to be sung to and Happy Birthday really gets on his nerves so Sammie learned how to play it for his birthday.  It was very special of her to do that.

The hat came from my birthday.  It will be making appearances for anyone who celebrates a birthday at our house.

Big strong boy!  We got him a 10 pound weight for on of his gifts.  Oh, Spencer if only that were true.  He is gaining a little weight, but still quite skinny.

Pi Day

Or in other words- March 14th- you know 3.14.  Anyway, we ate pie.  Blueberry Pie.  With Ice Cream.  That’s my kind of holiday!

The pie for pi day!  That’s a leftover pancake from dinner.  I know pancakes with bacon for dinner and pie for dessert.  Great nutrition for that night!

My Birthday!

The first gift was that silly hat. They made me try it on with my eyes closed because they thought I wouldn’t want to wear it and for sure wanted a picture of me looking so silly. I mean, who can blame them? I do look pretty silly.

They got me a kindle! They also got me some good smelly candles, some very silly green socks, and some hair clips. Thanks guys! It was a great day!

Art Fair

Sammie had a baby clay dragon named “The Satisfied Dragon” in the all district art fair.  He now lives on our piano.  He is still looking happy about life.
